Riccardo' s career in gastronomy began at age of 16, working in hotels in the Marche region of Italy. In 1990 he began working at the Michelin starred Da Alceo seafood restaurant in Pesaro. Since 1993 Riccardo worked in London, e.g. for Zafferano restaurant. Because of his work he moved for a short time also to New York. In 2002 Riccardo came to Prague as headchef of restaurant called Square. Three years later he opened his first restaurant - Aromi on Mánesova street. La Finestra in Cucina and La Bottega bistros followed shortly.

Vystudoval střední hotelovou školu a po zakončení studia nastoupil do hotelu Ambasador. Poté pracoval v restauracích Flambé, Bellevue a také v Hotelu Palace. V roce 2002 nastupil jako Chef de Partie do restaurace Square, kde se potkal s Riccardem Lucquem. Když v roce 2005 Riccardo Lucque otevřel svou restauraci Aromi, stal se Radek jejím šéfkuchařem. Se svým týmem v restauraci Aromi získal sedmkrát po sobě ocenění Michelin Bib Gourmand. Každý rok spojuje příjemné s užitečným a navštěvuje již pravidelně michelinské restaurace v Itálii a v Londýně. V současné době pracuje jako kreativní šéfkuchař La Collezione.
Jana once dreamed of being a teacher, but she became fascinated with the world of gastronomy. Eight years ago, she started working at Aromi as a helper, later working her way up to becoming a waitress. She then moved her career to the Zdeněk Oyster Bar where she fell in love with champagne and oysters.. When a position as manager of Gastronomica became available, she happily accepted the opportunity.
During his professional career, Jakub worked in a number of renowned restaurants. He gained experience at Chagall's restaurant in Prague or at RedPif as sous chef. He camě to the La Collezione group from Grand Cru restaurant, where he has been cooking under Jan Punčochář for three years.
