Fluffy dough, high edges charred by fire, juicy tomato sauce from San Marzano tomatoes, mozzarella fior di latte, parmesan and basil. The most basic and our most popular combo of Neapolitan pizza, which you can finally get in Gastronomica in Ondříčkova Street. In addition to the traditional pizza combinations, chef Daniel Holan will also offer you a couple variations by his own invention, so everyone can really enjoy whatever they like.
WHY PIZZA NAPOLETANA?
Because it's just the best and the taste! Remember the film Eat, Pray and Love, when the main character Julia Roberts goes to Naples with her friend, and even if their pants would break, the ordered Margheritas and they eat them all! And what more? They really enjoyed them without regrets. Thanks to the consistency of the dough, Neapolitan pizza is extra juicy, all the ingredients combine beautifully on it and shoot you into the ecstasy of flavors that you would like to indulge in again and again. Are you already salivating?
NOT DOUGH AS DOUGH
And ours is super tuned. We make Italian bigga dough for 3-4 days. At the beginning, its consistency looks quite similar to slovakian halušky. It is a mixture of flour, water and a pinch of yeast or ferment. The final dough is then aged for 2 to 3 days. Thanks to fermentation, the dough is much more digestible and contains less gluten.
WHAT WILL YOU TASTE?
Our pizza menu includes the popular Margherita, Capricciosa with artichokes, Funghi with oyester mushrooms and champignons and Salami with Salame Napoli Piccante and N´duja. In addition, you must definitely taste Tartufo pizza on a cream base with truffle vellutata, Prosciutto Cotto with a 63° egg or special Crudo pizza with Prosciutto di Parma and Burrata from Mozzarellart. And what you definitely must not miss is Burro pizza loaded with fresh ingredients of our own production, such as homemade garlic-herb butter, smoked crème fraîche, salsiccia supplemented with pine nuts and curls.
In the end, just a recommendation regarding consumption - take the slice in your hands, fold it in half and take a good bite. This is how you will enjoy the pizza as it should be and your gastronomic experience will be further enhanced.
